INGREDIENTS
- 2 heads Florida romaine lettuce, left whole and sliced down middle
- 4 ears Florida sweet corn, kernels cut off the cobs
- 3 Florida tomatoes, quartered
- 1/2 cup salad dressing (your favorite)
- Sea salt and fresh ground pepper, to taste
PREPARATION
Preheat oven to high broiler setting. Spread out corn and tomatoes onto a sheet pan, drizzle with olive oil and season with salt and pepper. Place at least 4 inches below broiler for 6 to 8 minutes, depending on desired amount of color. Do not walk away from the broiler, as food can quickly burn at this setting. Remove from oven and allow to cool slightly. Place romaine halves on a sheet pan and assemble salad from the pan. Add your favorite dressing and serve immediately.
