INGREDIENTS
- 4 pounds center-cut Florida beef tenderloin, trimmed and tied
- 2 large sprigs fresh herbs (rosemary, thyme)
- 2 tablespoons olive oil
- 2 tablespoons all-purpose seasoning (such as Everglades or steak seasoning)
PREPARATION
Preheat the oven to 425 degrees. Preheat a large oven proof skillet or cast iron pan over medium-high heat. Use butcher’s twine to tie up the tenderloin roast with the fresh herbs to help the roast cook evenly.
Add the olive oil to the preheated pan. Evenly season the entire roast with the seasoning blend and add to the preheated pan. Cook the roast for about 2 minutes per side until the outside of the roast is completely seared.
Place the whole roast and pan into the hot oven and cook for another 15 to 20 minutes to desired internal temperature. When the roast is cooked to the preferred internal temperature, carefully remove the pan from the oven, transfer the meat to a cutting board and let rest for at least 15 minutes before removing the butcher’s twine, slicing and serving.
Fresh tip: The beef tenderloin naturally has a thick end and a thinner end. The thinner end is usually tucked and tied so the roast cooks evenly. The twine also holds the fresh herbs in place when tied onto the roast.
Fresh tip: The best way to check if the beef is your preferred temperature is to stick an internal read food-safe thermometer in the thickest part of the meat. For medium-rare, pull the pan out at 110 degrees, medium 120 degrees, medium-well 130 degrees, and cooked well 140 degrees.
